Here's what I understand:

Part 1: Ash and girlfriend/friends arrive at the cabin, one of them find the tape-recording by Raymond Knowby, how he said the enchantments in the Necronomicon book he found there, and was then attacked by his deadite-wife, Henrietta, and had to kill her and bury her in the basement. Raymond somehow ended the curse, with Ash and co. playing the tape to bring it all back. Some of Ash's friends get turned to deadites, and they all also die. Ash tried to burn the book in the fireplace, but it didn't burn. Daybreak comes, the deadites are gone, and Ash steps out of the cabin, only to be attacked by the evil force.

Part 2:
Recap of first movie, changed to be just Ash and his girlfriend being there, where she, as a deadite, attacks Ash, biting his right hand, leading it to becoming infected with deadite-ness, and he chainsaws it off. Annie, her boyfriend and 2 others arrive, Annie carrying more Neconomicon pages. They keep getting killed off, one by Henrietta-deadite, then Annie recites the pages she brought to destroy the evil. It's destroyed, but a portal to the past opens up, Ash being sucked into it, as well as his car (Annie got stabbed in the back with Ash's hand). Arriving in medieval times, he kills a flying deadite, and the surrounding soldiers call him the prophesied hero (image of this in the book he and Annie had been looking at earlier).

Part 3:
End of second movie changed. Ash is being led in stockades, taken to a castle, thought to be a member of a rival castle peoples. He proves he's not with them, gets a new robot-hand, and agrees to get them the Necronomicon for some reason while saying the enchanted words, and in return they'll use the book to take Ash back to his time. While on the way, he breaks a mirror on an abandoned windmill, and gets attacked from some small versions of him, one he's forced to swallow. He drinks some nearby hot tea to kill him, then splits into himself and Evil Ash. Ash shoots and buries him. He then later finds the book, says the words wrong, and is assaulted by the undead and he returns to the castle. On arriving, the others realize Ash has doomed them all, but Ash weakly just wants to be sent home. However, Ash later organizes everyone into fighting the approaching undead, and they do, protecting the book, with what's-his-face's men arriving to help. Ash and the others defeat them, then they send him back to his own time. He tells a co-worker at S-Mart about his adventures, who doesn't believe him, also saying he didn't get the enchanted words right, and then the store is under attack by a female deadite. Ash uses a shotgun to take her out, and then romantically kisses a beautiful woman in the store.

It did burn. I re-watched the movie a couple of days ago and we actually do get to see it burn to a crisp. It's only a quick shot, but you can see it all blackened and charred right before the sun comes up. If you're trying to make sense of AvED's timeline screw ups, then you could say it regenerated. I don't like that explanation very much, but it's the only one that makes sense with the vague information they've given us. They still haven't explained how Ash had the book in his possession at the beginning of the series.

Raymond somehow ended the curse

Whatever he did, it also got him trapped between worlds, as we saw in ED2.

They keep getting killed off, one by Henrietta-deadite, then Annie recites the pages she brought to destroy the evil.

She recites the pages to make the evil force a material "thing of the flesh". The portal was then supposed to suck up that "thing of the flesh" into another dimension. So it's a little more complicated than just "to destroy the evil". The portal part didn't work exactly as they were expecting it and it ended up sucking up everything in front of it, including Ash.

He proves he's not with them, gets a new robot-hand, and agrees to get them the Necronomicon for some reason while saying the enchanted words, and in return they'll use the book to take Ash back to his time.

When Ash arrives in the past, the evil and the deadites are already running around like a plague. The reason they want Ash to retrieve the book from the cemetery is so they can get rid of it. You've also missed mentioning Sheila in your write-up. I don't know if that was intentional. Also, "what's-his-face" is called Henry the Red.

You actually got everything right. You were just missing a few details.

Yep - any confusion really just results from the Raimis changing details under the assumption that few people had seen the previous film.

When we already have this thread, there is one thing that bothers me a bit. In Evil Dead II, when Annie brings the remaining pages of the Necronomicon to the cabin, Ash sees himself on one of the pages, after which Annie explains that it's the "hero from the sky from 1 300 AD". However, the Book was written a long, long time before that. Does that mean that the Wiseman wrote about Ash's story INTO the Necronomicon after he sent him back to the present(/postapocalyptic future)?

It would kinda explain why this page wasn't written in human blood like everything else I guess.

I really like that theory. It would also explain why those pages were "lost" and separate from the book. They're not a part of the original book, but an after-the-fact annex. I guess we'll never know for sure, but that would really explain a lot and I see nothing in the films to contradict it. I like it.

That might also explain why there was a beneficent couple of spells to counteract the Evil in those missing pages. I often wonder why the original authors would include such information in a book that seems to be altogether evil and harmful to humankind.

Alternatively, maybe the Dark Ones did indeed write the whole thing, and those scenes of Ash are prophetic from their point of view.

Here is something I sometimes wonder-

We know that the Army of the Dead was the fault of Ash not reciting the words correctly. (I'm amused that he didn't even remember to speak the words until attempting to grab the third book.) However, was it also indirectly his and Annie's fault that the middle ages got afflicted by the 'plague of the dead' in the first place? I.e. they summoned the vortex which sent the Evil back there. It was sucked into the vortex first, so might have been deposited into a slightly earlier time-period.

If that's true, then I guess at some point the spell to make the Evil manifest as a physical entity must have worn off, returning it to it's spiritual self, or maybe the effect of the spell dissipated when the Evil vacated the presence of the pages responsible for it's situation.
